I wanted to share a blog post I read this morning by Seth Godin.
Seth Godin is the founder of the altMBA program, as well as a writer, entrepreneur, and expert on leadership. This program is particularly special to me as my husband Patrick successfully completed his altMBA in March of 2020.

Another “avoiding food waste tip” from AlignMend PT
Every had leftover sweet potato…
1 slice potato into 1/4” slices
2 broil on high for 2-4 minutes
3 spread avocado
4 place egg on top and sprinkle with red pepper for a bit of spice
gluten free avocado “toast”

I don't know about you but food waste is a big issue in my household. I am working hard to limited the amount of food that we throw away.
Roasted veggies is a staple in our house but often I am the only one that will eat the leftovers for the next few days.
Therefore, I came up with an idea...
Try this next time you have some roasted veggie leftovers
Blend in a food processor. Form into patties. Use a small amount of avocado/olive oil and fry in a pan till crisp on each side.
These are delicious little treats to eat as finger food, pack in lunches, or make a great snack.
I even froze my left over veggies for a couple weeks in a freezer bag. Then simply thawed them in the fridge and made this last batch of veggie patties.
So easy and so delicious with no waste and no guilt.

I was on the phone with my Mom this morning and I told her today is the 2 year anniversary of opening my own practice. She said, "What, 2 years? I thought you opened in 2020." Well I have been off the grid for awhile after the big move. I am excited to try to get some blogs going again regarding wellness, easy nutrition tips, and optimizing movement.
As you may know I am the mother of one. My son Rowyn is 12 years old ... going on 22! We are only a couple months form 13 and it is really beginning to show and I am loving every second of it!!!

Spinning….man, this has really become quite popular since Covid. Purchasing of spins bikes and home exercise equipment has skyrocketed since Covid. Undertandably so and I am always happy to know that people are taking an interest in their of health and wellness.
I have many clients who love spinning. Clients that had spin bikes, bought spin bikes, have spin bikes on back order....it goes on and on. Here is a little secret, I also love to use my spin bike I purchased a couple years ago. It gives me a good sweat and burn in a short amount of time. I am not sure I have ever feel that I have gotten better at it and if you are a spin enthusiast you might know what I am talking about...but maybe that is just me...LOL
